This is a very "sticky" coffee cake but really good. I make it for Sunday brunch.

Ingredients For pineapple walnut cake

2 call purpose flour

2 cgranulated sugar

2 tspbaking soda

1 cwalnuts
-
2eggs
-
1 can20-oz can of crushed pinneaple (un-drained)
- FROSTING

1 pkg8-oz of cream cheese
-
1 stick4-oz margarine
-
2 cpowdered sugar
-
1 tspvanilla extract
How To Make pineapple walnut cake

1Preheat the oven to 350, sift together the dry ingredients, and add walnuts, eggs and the entire content of the pineapple can.

2Stir only until the ingredients are wet.

3Pour into an un-greased 9x13-inch pan & bake until golden brown (35-40 min).

4While the cake is baking, cream together the frosting ingredients in a food processor (or a good mixer as long as the margarine and cream cheese are almost room temperature).

5Let the cake cool for only 10 minutes and then spread the frosting on while the cake is still warm and in the baking pan.
