This is a recipe from 1960. I made it for my family many times. I prefer to use the all-purpose flour option. It made a slightly firmer loaf.

Ingredients For pineapple spiced loaf

2 ccake flour or 1 3/4 c. all purpose flour

2 tspbaking powder

1/2 tspbaking soda

1/2 tspsalt

1 tspcinnamon

1/4 tspcloves
-
1/4 tspnutmeg
-
6 Tbspshortening
-
3/4 cwhite sugar
-
2eggs
-
1 ccrushed pineapple with juice

shredded coconut
How To Make pineapple spiced loaf

1Grease a loaf pan and line with waxed or parchment paper.

2Sift together twice and return to sifter first 7 (dry) ingredients.

3Cream shortening and sugar. Add 2 well-beaten eggs a little at a time, beating well after each addition.

4Add dry ingredients alternately with the crushed pineapple and juice. Combine lightly after each addition. Turn batter into prepared pan. Sprinkle with a little shredded coconut.

5Bake in 350 degree F. oven for 1 hour. When done let loaf pan cool on a rack for 15 minutes before turning out. Cool completely before serving.
