I first had this cake at a bridal shower and was a dense cake, but so moist and delicious. I had to have the recipe. I have since then made this many, many times. The frosting is so creamy. I usually add coconut to the top, but to my surprise was out of it. It's great on it though. My friends and family love it, hope you do too! My photo's

Ingredients For pineapple cake

2eggs

2 csugar
-
1 tspvanilla extract

1/2 tspbaking soda
-
2 call purpose flour
-
1/2 tspbaking powder
-
1/2 tspsalt
-
1 can(20 ounces) crushed pineapple, undrained

1/2 cchopped walnuts
- FROSTING

1 pkg(8 ounces) cream cheese, softened

1/2 cbutter, softened
-
2 cconfectioners' sugar
How To Make pineapple cake

1Preheat oven to 350 degree F Grease a 13-in. x 9-in. baking pan.

2In a large bowl, beat the eggs, sugar and vanilla until fluffy.

3Combine the flour, baking soda, baking powder and salt; add to egg mixture alternately with pineapple. Stir in walnuts.

4Pour into a greased 13-in. x 9-in. baking pan. Bake at 350° for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.

5In a small bowl, beat the cream cheese, butter and confectioners' sugar until smooth. Frost cake. Sprinkle with coconut ( optional ). Store in the refrigerator.
