Ingredients For pina colada cupcakes

  • CAKE INGREDIENTS
  • 2 1/3 c
    all purpose flour
  • 2 1/2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1 c
    butter ( 2 sticks )
  • 1 c
    sugar
  • 3
    eggs
  • 1 tsp
    coconut extract
  • 1 tsp
    rum extract
  • 2 Tbsp
    fresh lime juice
  • 8 oz
    crushed pineapple with juice
  • 1/4 c
    milk
  • 1/2 c
    flaked coconut
  • ICING INGREDIENTS
  • 8 oz
    pkg cream cheese ( good brand )
  • 1/2 tsp
    rum extract
  • 4 c
    powdered sugar
  • 1/2 c
    flaked coconut (garnish for top of cupcakes)

How To Make pina colada cupcakes

    Pre-heat oven to 350*F.Line muffin pan with paper baking cups and spray with cooking spray.In a medium bowl mix flour,baking powder,salt together and set aside.

    In a large mixing bowl with electric mixer or a stand mixer on medium speed cream butter 30 seconds or so;then slowly add sugar and mix about 2 minutes more after the sugar is in.Add eggs 1 at a time.add flavorings,milk,pineapple and coconut.Slowly add flour mixture til smoothe about 30 seconds.

    Spoon batter into baking cups. Bake 22 to 25 minutes. Test to see if are done with with toothpick.

    For icing; Cream softened cheese and rum extract with electric hand mixer.Gradually add powdered sugar to the mixture.Ice cupcakes and garnish with coconut flakes.
