This cake is light and yummy. Problem is it is so light , you tend to eat more than you should! This is my husband's favorite cake.

Ingredients For pig picking cake

  • 1 box
    yellow butter cake mix( i have used differant brands and they work fine.)
  • 1/2 c
    vegetable oil
  • 4
    eggs
  • 1-11oz. can
    mandarin oranges with juice
  • frosting for cake
  • 1-16 0z.
    tub of cool whip
  • 1- small
    vanilla instant pudding mix
  • 1-20 oz. can
    pineapple, crushed

How To Make pig picking cake

  • 1
    grease and flour either a 9" X 13" pan or two round 9" pans. I like using the one pan as it just makes every thing easier for me. Pre-heat oven to 350 degrees F.

    Mix cake mix, veg. oil, eggs and mandarin oranges with electric mixer at low speed until just mixed well.

    Bake about 40 min. depending on your oven, til cake springs back when touched lightly in the middle.

    While your cake is cooling, make the frosting. Empty pineapple into large bowl and add the vanilla pudding.Mix throughly and then add the cool whip and mix well. When cake is completely cooled, frost and then refrigerate.
