This recipe was created for my sister's birthday by combining some of her favorite things...vanilla cake and peanut butter cups...then topped with peanut butter frosting.

Ingredients For peanut butter cup-cakes

  • CAKE BATTER
  • 1 c
    sugar
  • 1/2 c
    butter, softened
  • 2
    eggs
  • 2 tsp
    vanilla extract
  • 1 1/2 c
    flour
  • 1 3/4 tsp
    baking powder
  • 1/2 c
    milk
  • 12
    mini peanut butter cups, chilled and unwrapped
  • FROSTING
  • 1/2 c
    butter, softened
  • 1 c
    creamy peanut butter
  • 3 Tbsp
    milk
  • 2 c
    powdered sugar

How To Make peanut butter cup-cakes

    Preheat oven to 350 degrees. Line cupcake tins with paper liners.

    CAKE BATTER: Cream together butter and sugar. Beat in eggs; stir in vanilla. Add flour and baking powder until well mixed. Stir in milk until smooth. Fill cupcake liners 2/3 full with batter. Press one peanut butter cup into each cupcake. Bake for 20-25 minutes. Cool completely before frosting.

    FROSTING: Cream butter and peanut butter. Add sugar until combined. Stir in milk as needed until smooth. Frost cooled cupcakes and decorate as desired.
