Made with a cake mix and canned peaches, I created this original recipe out of what I happened to have on hand back in 2010.

Blue Ribbon Recipe

This simple dessert is a cross between peaches and cream and a peach cobbler in bar form. They're sweet, creamy, and soooo good. Easy to make, you can throw them together in no time. The bars have a crust layer, that's topped with a sweet cream cheese filling and peaches on top of that. On top, there's a sweet crumb layer. This a great dessert for any time of the year, but would be perfect for summer parties. The recipe makes 12 very generous bars that are pretty rich and can be cut into smaller pieces if you needed to.

Ingredients For peachy keen bars

  • 1 pkg
    dry cake mix-white, yellow or French vanilla
  • 1/3 c
    butter, room temperature
  • 2 lg
    eggs, divided
  • 29 oz
    can peach slices, drained
  • 12 oz
    cream cheese, room temperature
  • 1/4 c
    sugar
  • 1 tsp
    pure vanilla extract

We misread the instructions and kept the sliced peaches whole instead of dicing them (mistakes happen to everyone!). The result was just bigger pieces of peach in each bar... which isn't a bad thing.
  • Preheating the oven.

    Preheat oven to 350 degrees. Spray a 9x13” pan with non-stick cooking spray.
  • Cake mix, butter, and egg in a mixing bowl.

    In a large bowl mix cake mix, butter, and 1 egg with a fork until you get a crumbly mixture.
  • Setting some crumb aside.

    Set aside 1 1/2 cup of crumbs for topping.
  • Crumb pressed into the bottom of the pan.

    Press the remaining crumbs on bottom of prepared pan; Bake 8 minutes.
  • Peaches placed on the crust.

    Dice drained peaches and spread over top of crust.
  • Cream cheese, sugar, egg, and vanilla extract whipped together in a bowl.

    In the bowl of an electric mixer on medium-high speed, beat the cream cheese, sugar, remaining egg, and vanilla extract.
  • Cream cheese mixture spread over peaches.

    Spread over top of peaches.
  • Crumbs sprinkled over the peaches.

    Sprinkle with reserved crumbs. Bake 30 minutes.
  • Peachy Keen Bars after they're baked.

    Chill at least 30 minutes before serving. Serves 12. Store leftovers in the refrigerator.
