Made with a cake mix and canned peaches, I created this original recipe out of what I happened to have on hand back in 2010.
Blue Ribbon Recipe
This simple dessert is a cross between peaches and cream and a peach cobbler in bar form. They're sweet, creamy, and soooo good. Easy to make, you can throw them together in no time. The bars have a crust layer, that's topped with a sweet cream cheese filling and peaches on top of that. On top, there's a sweet crumb layer. This a great dessert for any time of the year, but would be perfect for summer parties. The recipe makes 12 very generous bars that are pretty rich and can be cut into smaller pieces if you needed to.

1 pkgdry cake mix-white, yellow or French vanilla

1/3 cbutter, room temperature

2 lgeggs, divided

29 ozcan peach slices, drained

12 ozcream cheese, room temperature

1/4 csugar

1 tsppure vanilla extract

Test Kitchen Tips
We misread the instructions and kept the sliced peaches whole instead of dicing them (mistakes happen to everyone!). The result was just bigger pieces of peach in each bar... which isn't a bad thing.

1Preheat oven to 350 degrees. Spray a 9x13” pan with non-stick cooking spray.

2In a large bowl mix cake mix, butter, and 1 egg with a fork until you get a crumbly mixture.

3Set aside 1 1/2 cup of crumbs for topping.

4Press the remaining crumbs on bottom of prepared pan; Bake 8 minutes.

5Dice drained peaches and spread over top of crust.

6In the bowl of an electric mixer on medium-high speed, beat the cream cheese, sugar, remaining egg, and vanilla extract.

7Spread over top of peaches.

8Sprinkle with reserved crumbs. Bake 30 minutes.

9Chill at least 30 minutes before serving. Serves 12. Store leftovers in the refrigerator.
