Tiffany is right, this dessert is not a boring coffee cake. It is full of great spices and flavor. We loved the pairing of cherries and peaches. The fruit brings a unique flavor to this moist and delicious cake. When baked, it covered up any resemblance of a swirl on top. But, with a little fresh fruit added to the top, it really makes this cake stand out and look pretty. Serve this at your next gathering and everyone will be very happy.

Ingredients For peach preserves and tart cherry mash potato cake

  • 1 c
    all-purpose flour
  • 3/4 c
    dark brown sugar
  • 1 Tbsp
    baking powder
  • 1 pinch
    salt
  • 1
    egg
  • 1 tsp
    dark molasses
  • 1 Tbsp
    vanilla
  • 1/2 c
    shortening
  • 1 tsp
    cinnamon
  • 1 tsp
    ginger
  • 1/8 tsp
    clove
  • 1/8 tsp
    nutmeg
  • 1/2 c
    mashed potato or flakes
  • 1 c
    milk
  • 1/2 c
    applesauce
  • 1/2 c
    cherries, stoned and halved
  • 1/2 c
    peach preserves
  • 2 Tbsp
    water

How To Make peach preserves and tart cherry mash potato cake

  • Mixing eggs, shortening, and sugar in a bowl.

    In a mixing bowl, beat egg, shortening, and sugar on high for about 3 minutes.
  • Adding spice, salt, and vanilla to the batter.

    Add spices, salt, and vanilla. Beat once more.
  • Applesauce and potatoes added to the batter.

    Add applesauce and mash potatoes or flakes. Mix.
  • Adding flour and milk to the batter.

    Add in thirds, alternating flour and milk. Mixing in between each addition.
  • Folding in the cherries.

    Fold in cherries (tossed in flour).
  • Batter poured into baking dish.

    Pour in a small, greased 8x8 square pan.
  • Water and peach preserve in a bowl.

    In a bowl, mix water and preserves.
  • Swirling preserves into the batter.

    Spoon onto batter. Take a spatula and gently swirl.
  • Cake ready to bake in the oven.

    Place in oven of 325F.
  • Potato cake out of the oven.

    Bake for 35 - 40 minutes until center is loosely set.
  • Cake removed from the pan.

    Allow to cool for 10 minutes before inverting on a second plate, then onto serving plate. That way peach swirl is on top.
