I love the blended flavors of peaches, coconut and almonds. This loaf is moist and delicious, a perfect coffee break treat!

Ingredients For peach loaf

  • 2 c
    peaches, peeled and finely chopped ( canned peaches, well drained, works fine)
  • 1 Tbsp
    lemon juice
  • 2 c
    white flour
  • 1/2 c
    whole wheat flour
  • 3/4 c
    sugar
  • 3 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1/2 tsp
    cinnamon
  • 3
    eggs
  • 1/2 c
    oil
  • 1/4 c
    milk
  • 1 tsp
    vanilla extract
  • 1 tsp
    almond extract
  • 1/4 c
    pecans, toasted and chopped
  • 1/3 c
    coconut

How To Make peach loaf

    Peel and chop peaches, stir in lemon juice and set aside.

    In a large bowl combine dry ingredients.

    In another bowl, combine eggs, milk, oil and flavorings.

    Add wet ingredients to the dry ingredients just combined. The batter will be thick.

    Fold in the peaches, pecans and coconut

    Pour into a greased loaf pan and bake at 350 degrees for 1 hour or until inserted toothpick comes out clean. Allow to cool in pan for a few minutes before turning out on a rack to cool completely before slicing.
