French Canadians had large families, and are known to have a sweet tooth. Every supper always included a dessert. It was eaten with bread/butter and we dipped the bread in molasses or corn syrup mixed with a small amount of butter which changed it to caramel. or a sheet cake. This cake recipe is from the Quebec area and is a winner. It is great as is, or served hot with ice cream.

Ingredients For pauper's cake

  • 2 1/2 c
    brown sugar, firmly packed
  • 2 Tbsp
    all purpose flour
  • 3 1/4 c
    water
  • 3 Tbsp
    butter or margarine
  • 1
    large egg
  • 1/3 c
    granulated white sugar
  • pinch
    salt
  • 3/4 c
    milk you have on hand
  • 3 Tbsp
    butter melted
  • 2 c
    all purpose flour
  • 1 1/2 tsp
    baking powder

How To Make pauper's cake

    I also call this Dumpling Cake, because of how it is mixed and baked in the oven usually in the pan that you will heat the sauce. Make sure it has high sides to avoid spilling over in the oven. I have made this for 30 people and have used my turkey pan to make the sauce; add the batter; and bake it.

    In a large high sided saucepan; blend brown sugar with flour add water and butter. Heat on medium heat to boiling point, watch carefully.......

    BATTER: In a bowl, combine flour, sugar, baking powder and salt. Stir in melted butter, milk, and beaten egg. Mix well and drop large spoonfuls of batter into the hot sauce like you would if making dumplings.

    Pre heat oven to 350 . Bake 35 to 40 minutes until tops are brown. When supper is done Serve your hot dessert with ice cream or as is.
