This is an easy and delicious cake that my friend and co worker shared with me. It evens tastes better after it has been frozen and thawed so I now make it ahead of time. That makes it a real time saver.

Ingredients For pat's almond cake

  • 3/4 c
    soft margarine
  • 1 1/2 c
    sugar
  • 2
    eggs
  • 1 1/2 tsp
    almond flavoring
  • 1/2 tsp
    vanilla
  • 1 1/2 c
    flour

How To Make pat's almond cake

  • 1
    Cream together first two ingredients. Add the remaining ingredients. Blend ingredients together - spread in 9” round pan lined with foil (for easier clean-up). Top with 3 Tbsp. slivered almonds blended with 1 tsp. sugar.(try just almonds and dusting of 10X or 1 beaten egg white with 1 tsp sugar and almonds sprinkled on top). Bake at 350 for 40-45 minutes.
