paleo wow coconut bread
I have started making my own coconut milk at home and if you do this you know, I am now generating a LOT of coconut flour to be used. Since coconut flour is expensive, I haven't used a lot of it in my recipes before. If you're a fan of the Paleo way of eating, then this coconut bread recipe is for you. It has a nutty, natural flavor to it. We added the optional coconut and raw sugar which forms a slight crust on top (but doesn't add sweetness to the recipe). This could be eaten as a meal or a snack. We served it with natural nut butter, banana slices, almonds, and honey for a delicious snack. This would be a great base for avocado toast too.

3/4 corganic coconut flour

1 tspaluminum-free baking powder

1/2 tspsea salt

1/2 craw organic coconut oil, softened

1 Tbspcinnamon, ground

1/2 tspfresh ground nutmeg

1 tsporganic vanilla extract

2 Tbspraw apple cider vinegar

6 lgfree range eggs, seperated

2 Tbspraw honey
-
2 Tbspdried organic unsweetened coconut flakes *optional

2 tspraw sugar *optional
How To Make paleo wow coconut bread

1Preheat oven to 350 F and grease a standard loaf pan. Line the bottom of the pan with parchment paper.

2Mix together coconut flour, baking powder, salt, cinnamon, and nutmeg in a large bowl.

3Add in softened coconut oil and honey. Stir until well blended and smooth.

4Separate eggs. Beat egg whites until stiff and reserve.

5Add egg yolks to the batter with vanilla and apple cider vinegar.

6Working quickly, but gently, fold in egg whites.

7Pour the batter into your loaf pan. Sprinkle on some flaked coconut and sugar, if desired.

8Bake in a 350 degree F oven for about 40 minutes.
