This is a really good coffee cake recipe. Originally I saw the recipe on Mr. Food. I have changed it up a bit to suit my taste. You've got to chill this baby overnight, but it's definitely worth it. Serve Overnight Coffee Cake at your next breakfast, or brunch.

Ingredients For overnight coffee cake
- COFFEE CAKE

2 call-purpose flour

1 tspbaking powder

1 tspbaking soda

1/2 tspsalt

3/4 cgranulated sugar or splenda (granulated)

1/2 cpacked brown sugar
-
1 1/2 tspground cinnamon

3/4 c(1 1/2 sticks) butter, melted

1 c1%, 2%, or fat free milk
-
2 lgeggs or 1/2 c, liquid egg substitute
-
1/2 cchopped pecans or walnuts
-
1/2 ccoconut, flaked
- TOPPING
-
1 tspground cinnamon
-
1/2 cbrown sugar, lightly packed

1/2 ccoconut, flaked

1/2 cchopped pecans or walnuts
How To Make overnight coffee cake

1Coat a 9 x 13-inch baking dish with 'Baker's Joy' cooking spray.

2In a large bowl, combine flour, baking powder, baking soda, salt, sugar, 1/2 cup brown sugar, 1 1/2 teaspoon cinnamon, butter, eggs or liquid eggs, milk, coconut, and pecans or walnuts.

3Beat all until well combined; pour into prepared baking dish then cover and chill at least 8 hours, or overnight.

4NEXT DAY WHEN READY: Preheat oven to 350 degrees F.

5In a small bowl, combine topping consisting of: 1 tsp. ground cinnamon 1/2 cup EACH of the following ingredients... coconut, brown sugar and pecans or walnuts.

6Sprinkle over chilled batter and bake 30 to 35 minutes, or until a toothpick inserted in center comes out clean. Cut, serve warm & enjoy! GREAT WITH YOUR FAVORITE CUP OF COFFEE OR HOT CHOCOLATE!
