Struggled to find a good carrot cake recipe for years. Got this one from my mom, who got it from my aunt.

- CARROT CAKE

2 call purpose flour

2 csugar
-
1 1/2 tspground cinnamon

3 tspbaking powder

3 tspbaking soda

4eggs
-
1 cvegetable oil
-
4 cshredded carrots
-
1 1/2 cpecans, in pieces
- CREAM CHEESE FROSTING

1 pkg8 oz cream cheese, softened

1 stickbutter, softened

4 cpowdered sugar, sifted

1 tspvanilla extract
How To Make old fashioned carrot cake w/ cream cheese frosting

1Preheat oven to 375 degrees farenheit. Grease and flour 2 nine inch round cake pans, set aside.

2For the cake: Combine all the dry ingredients in a large mixing bowl.

3Add eggs and oil, mix well on low speed with hand mixer

4Add carrots and pecans, fold into batter. (Note: Batter will be very thick)

5Pour batter into prepared cake pans and bake 45 to 50 minutes, until browned on top and tooth pick comes out clean.

6While cake is baking, prepare frosting. Cream butter and cream cheese on low-medium speed until well combined and fluffy. Add vanilla extract and combine.

7Add powdered sugar, one cup at a time, be sure to fully incorporate each addition before adding the next. Scrape down sides of bowl as needed. Place frosting in fridge to cool.
