I couldn't find soft ginger spice cookies at my local grocery store, so I came up with this easy and economical recipe using cake mix.

Ingredients For october ginger spice cookies

  • 1 box
    dunkin hines deluxe spice cake mix
  • 1 stick
    butter or stick margarine
  • 1
    large egg
  • 1 Tbsp
    water, cold
  • 1 Tbsp
    freshly grated ginger (optional)
  • 1 tsp
    ground ginger
  • 1/2 tsp
    apple pie or pumpkin pie spice (optional)

How To Make october ginger spice cookies

  • 1
    Mix all ingredients together using a stand or hand mixer. Add a tiny bit more water if necessary (if mixture is too dry). Mix well.

    Preheat oven to 350 degrees. Form mixture into small balls (about teaspoon sized, depends on how small or large you want the cookies) and place on an ungreased cookie sheet. Slightly press down each ball of cookie batter. Bake on middle rack for approximately 10-11 minutes. Remove from oven and cool.
