Great hit with family and friends. Moist and delicious with wonderful topping. Great one to take along for covered dish or dinner dessert. I wanted something that added fiber to my diet and was sweet. Love the brown sugar & cinnamon flavor.

Ingredients For oatmeal cake

1 1/2 cwater, boiling

1 coatmeal, quick cooking

1/2 cbutter
-
1 csugar
-
1 cbrown sugar
-
2eggs, beaten
-
1 1/2 cflour
-
1/2 tspsalt
-
1 tspsoda
-
1 tspcinamon
- TOPPING
-
1/2 cbutter
-
1/4 ccream or milk
-
1/2 cbrown sugar
-
1 cpecans, in pieces or chopped
-
1 ccoconut
-
1 tspvanilla
How To Make oatmeal cake

1Pour boiling water over oatmeal and let stand 20 minutes.

2Cream together butter, sugars, and eggs and blend well.

3Sift flour, salt, soda and add to butter mixture little at a time & blend well.

4Add oatmeal and cinnamon and blend together.

5Bake at 325 degrees in a 9 x 13 pan for 35-45 minutes.

6TOPPING

7Heat butter, cream and sugar in pan (do not let boil).

8Add remaining ingredients and put the topping on cake right out of oven. Place in oven under the broiler until slightly browned. Let cool.
