Not a quick cake to make, but well worth the time. This family recipe was passed down from my great-grandmother and has been a family favorite for generations.

1½ cflour

1 tspbaking soda

3/4 tspcinnamon

1 cquick cooking oats

1 csugar

2eggs
-
1/2 tspsalt

1/4 tspnutmeg

1¼ cboiling water

1/2 cbutter

1 clight brown sugar
-
1 tspvanilla
- TOPPING

1/2 clight brown sugar
-
3 tspcream
-
1/4 cbutter
-
3/4 ccoconut
How To Make oatmeal cake with topping

1Preheat oven to 350° F. Sift together flour, salt, baking soda, nutmeg, and cinnamon in a bowl; set aside.

2Pour boiling water over oats. Cover and let set for 15 minutes.

3Cream butter. Gradually add sugars; beat until light and fluffy. Add eggs and vanilla; beat until light and fluffy.

4Fold into oats; mix well.

5Add dry ingredients; mix well.

6Pour into greased 13x9x2" pan. Bake for 50-55 minutes.

7Combine topping ingredients in a pan and cook over low heat for 5 minutes. Spread over warm cake and broil for 5 minutes.
