- CAKE:

1 1/2 cboiling water

1 coatmeal (old fashioned or quick)

1/2 c(1 stick) butter
-
2eggs, beaten

1 cbrown sugar
-
1 cwhite sugar
-
1 tspbaking soda
-
1 tspcinnamon
-
1/2 tspnutmeg
-
1 tspvanilla extract
-
1 1/3 call purpose flour
- FROSTING:
-
1/2 c(1 stick) butter
-
1/2 cwhite sugar
-
1/4 ccream
-
1 to 2 cshredded coconut
-
1 cchopped walnuts (may use pecans if preferred)

1 tspvanilla extract
How To Make oatmeal cake with coconut walnut frosting

1For The Cake: In a large bowl, pour boiling water over oatmeal and add the butter. Let stand until butter is melted.

2Add all other ingredients. Mix together well.

3Pour into a greased and floured 9x13x2-inch baking pan. Bake in a preheated 350-degree oven for 30 to 35 minutes.

4For The Frosting: Melt the butter in a quart size pan and add sugar and cream. Bring to a boil and cook until it thickens, about 4 minutes.

5Remove from heat and stir in coconut, nuts, and vanilla. Pour over cake and broil in oven until toasty looking. Watch closely.

6Allow cake to cool completely before cutting.
