When I was first married my husband and I went to live in Malawi , Africa where I met a great American lady named Dee who shared her friendship and this cake with me. I have been making this cake for over 30 years and I always get asked for the recipe. It is delicious, moist and so yummy especially warm with homemade ice cream!!!

Ingredients For oatmeal cake

  • 1 1/2 c
    boiling water
  • 1 c
    quick oats
  • 1 c
    butter, room temperature
  • 1 c
    white sugar
  • 1 c
    brown sugar,lightly packed
  • 2
    eggs
  • 1 1/3 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1 tsp
    cinnamon
  • 1 tsp
    vanilla extract
  • pinch
    pepper

How To Make oatmeal cake

    Grease a 9 x 13 pan. Pour boiling water over oats, cover and let stand for 15 mins. Cream together both sugars with the butter, add eggs one at a time till well mixed. Stir together flour, soda, cinnamon and pepper. Add to butter mixture alternately with the oat mixture.Pour into pan. Bake 25 mins

    Topping: 3 tbsps butter 1 cup chopeed nuts, optional 3/4 cup brown sugar, 3 tbsps milk, Mix together , spoon over hot cake and bake for approx 10 - 15 mins till bubbly. If you find that the butter is too hard to mix with the milk just soften in the mocrowave. It doesn't matter if it is melted a little but do not melt completely.
