this was my grandmother's favorite cake to make for me when I was younger, I changed it a little but it still reminds me of her cooking.

Ingredients For oatmeal cake

1 1/4 cboiling water

1 coatmal

1/2 cbutter melted

1 csugar

1 cbrown sugar

1 tspvanilla

2eggs

1 1/2 cflour

1 tspbaking soda
-
1/2 tspsalt

1/4 tspcinnamon

1/4 tspnutmeg

1/2 ccoconut
-
1 canpineapple diced and drained

1/4 cbutter melted

1/2 cbrown sugar

1 ccoconut
-
1 canreserved pineapple juice from can
How To Make oatmeal cake

1preheat oven to 350. In medium bowl, pour boiling water over oats, let stand for 20 minutes.

2add butter, sugars, and vanilla; mix together well. add eggs, stir til blended.

3add in flour, baking soda, salt, cinnamon, and nutmeg; mix til blended. fold in coconut and pineapple, pour into a 13x9 greased pan.

4bake for 50 minutes, when out of oven poke holes into top of cake with the end of a spoon. pour topping over cake, let cool cut into squares.

5Topping: combine all ingredients, spread evenly over cake.
