My Mother used to make this cake when I was a little girl. Its a little different but it make a delicious cake. I hope you enjoy this cake.

Ingredients For oatmeal cake

  • 1 1/4 c
    boiling water
  • 1 c
    quick oats
  • 1/4 tsp
    salt
  • 1 tsp
    vanilla extract
  • 1 c
    brown sugar
  • 1 tsp
    ground cinnamon
  • 1/2 c
    nuts
  • 1 stick
    butter
  • 1 c
    sugar
  • 2 lg
    eggs
  • 1 1/2 c
    all purpose flour
  • 1 1/2 tsp
    baking soda
  • 1 c
    raisins
  • ICING
  • 1 c
    brown sugar
  • 1/2 c
    nuts
  • 1/2 c
    coconut
  • 1 1/2 tsp
    melted butter
  • 2 Tbsp
    cream

How To Make oatmeal cake

    Preheat oven to 350 degrees. Pour boiling water over oats. Cream together sugars, eggs, and butter for 3 minutes. add to cooled oats. Sift together flour, cinnamon, and baking soda. Then add to oatmeal mixture. Fold in vanilla, nuts and raisins.Pour into 9x13 greased and floured pan. Bake 30 minutes.

    ICING: Mix all ingredients together and put on top of warm cake. Return to oven for additional 10 minutes. Cake should be finished but insert toothpick in center to see if it comes out clean.
