I first made this cake when I was about 10 yrs old. It won me a blue ribbon at the 4-h fair. I was so proud. It's a very easy but tasty cake. Hope you enjoy.

Ingredients For oatmeal cake

1 1/4 cboiling water

1 cquick cooking oats
-
2 stickbutter
-
2eggs
-
1 csugar
-
1 1/3 cflour
-
1 tspsoda
-
1 tspvanilla

1 tspcinnamon

1/4 tspsalt
- ICING
-
1/2 csugar
-
1/2 cbrown sugar
-
1/2 stickbutter
-
1/2 cevaporated milk
-
1 tspvanilla
-
1 ccoconut
-
1 cchopped pecans
How To Make oatmeal cake

1Place oatmeal in mixing bowl with 1 stick of butter. Pour boiling water over oatmeal cover and let sit for 20 min.

2Add flour,soda,cinnamon and salt together set aside.

3Cream 1 stick of butter,sugar together add eggs one at a time beat till fluffy. Add oatmeal mix well.Add dry ingedents mix well.

4Pour in a greased 13x9 in pan. Bake for 30 to 45 min at 350 degress.

5In a saucepan mix 1/2 stick of butter, sugar, brown sugar and evaporated milk bring to a boil. Remove from heat add coconut and pecans. Mix well.

6Take cake from oven while still warm spread on icing carefully. But in oven under broil till lightly browned on top. Cool Enjoy
