We always have a banana or two that gets too ripe. I place them in the freezer. The outside turns black but the inside is fine for Banana Bread of Muffins. They also seem to have a stronger flavor, which I like. This will make two loafs or 24 muffins. As you see, I made muffins and mini bundt cakes.

Ingredients For not just another banana muffin

1/2 coil

1 3/4 csugar

2 lgeggs
-
1/4 cbuttermilk
-
1/2 tspbanana flavoring (optional)

3 tspvanilla extract

4 lgvery ripe bananas
-
2 call purpose flour
-
1/4 tspsalt
-
1 tspbaking soda
-
1 1/2 cchopped walnuts (optional)

*NOTEif nuts not used, add 2 additionsl tbls. flour
How To Make not just another banana muffin

1Preheat oven to 375, Spray with oil and flour baking spray or grease and flour baking pans

2Cream sugar and oil well

3add eggs, mix well

4mash bananas and add to wet mixture

5Add buttermilk, and both flavorings. mix well

6Combine Flour,baking soda and salt, add to wet mixture. Mix until just combined well
-
7add chopped nuts if using them or additional flour
-
8Pour into 2 prepared large loaf, or muffing pans

9Bake loafs for about 45 min. adjust for muffins or mini cake pans. Bake until done in the center.
