My dad made this for me once on my birthday..I said...uummm yuck..who wants a veggie cake..he said..TRY IT FIRST...one of my favorite cakes to eat & make...I of course revised the recipe and now make it for my family...one of my hubby's fave cakes...=)

Ingredients For no icing needed zucchini cake

2eggs

2 call purpose flour

1 tspbaking soda

2 tspbaking powder

1 tspsalt

3 tspcinnamon

1 tspvanilla extract

1 cvegetable oil

1/2 tspnutmeg

2 cgrated zucchini, including peel
How To Make no icing needed zucchini cake

1pre-heat oven to 350*...choose what pan you'd like to use ( cupcake holders here ) and lightly coat with non-stick spray ( butter flavor keeps the cake super moist )

2Mix first 10 ingredients together. Add zucchini and mix for about 3 minutes. Pour into desired pan and bake till toothpick comes out clean.

3You dont need a frosting for this cake; it's super moist & delicious..but if you're like me..a nice vanilla glaze or cream cheese frosting pairs well with this cake...ENJOY!!!
