I adore brownies but it was so hard to find brownies that would fit into a low carb lifestyle and still taste good. After trial and error, I managed to revamp my traditional brownie recipe into this reduced carb/calorie version. This one has 161 calories and 9 net carbs per brownie as opposed to my traditional recipe that has 227 calories and 29 net carbs/serving and that doesn't include the frosting! These came out moist and chewy, just like my regular brownies and the best part is that I can enjoy one without the guilt! This recipe should fit in with most weight-loss/maintenance plans.

Ingredients For no guilt moist and chewy brownies

  • 1 stick
    butter (not oleo)
  • 1/4 c
    cocoa, unsweetened
  • 1/4 c
    semisweet chocolate chips, sugar-free
  • 2 lg
    eggs
  • 1/2 c
    splenda or other 0 calorie sweetener
  • 1/2 c
    splenda brown sugar blend
  • 1 tsp
    pure vanilla extract
  • 1 tsp
    black coffee
  • 1/4 c
    almond flour
  • 1/4 c
    coconut flour
  • 1/4 tsp
    salt

How To Make no guilt moist and chewy brownies

    Preheat oven to 350 degrees. Line an 8 X 8 pan with parchment paper. Spray with cooking spray. Set aside

    Melt butter and chocolate chips together in the microwave. Pour into mixing bowl. Add cocoa and mix until smooth. Add eggs one at a time, beating well after each addition. Add sugars and beat in well. Add vanilla and coffee and mix well.

    Sift together almond flour, coconut flour and salt. Stir into cocoa mixture by hand. DO NOT USE A MIXER!

    Spread mixture into prepared pan. Bake for about 20 minutes or until toothpick comes out clean. Let cool for about 10 minutes and remove from pan. Cut into 9 individual servings. Enjoy without guilt!
