My love of Notre Dame & lemon lush inspired this dessert. A rare time I've made up a dessert recipe completely on my own. Just had a piece & it is SO yummy! You must try this one. Make sure to use a baking pan that is not really lengthy, but deep enough that you can fit all the layers in there easily.

This was a big hit in the Test Kitchen. From the nuts in the crust to the creaminess in the chocolate layer and the great banana flavor of the top layer, this is delicious!

Ingredients For naughty irish monkey

  • 1/2 c
    walnuts, crushed
  • 1/2 c
    butter, softened
  • 1 c
    flour
  • 2
    3.4 ounce boxes chocolate pudding
  • 1
    8 oz. package cream cheese, softened
  • 1 c
    powdered sugar
  • 2
    bananas, ripe & mashed
  • 1
    container Cool Whip, thawed
  • 1 c
    Irish cream, cold
  • 2 c
    milk, cold
  • 1 tsp
    banana extract

How To Make naughty irish monkey

    Preheat oven to 350 degrees. Mix the butter, walnuts & flour in a bowl. Press this into a greased pan to form the crust. Bake for 10-20 minutes until golden.

    Let crust cool. Mix the sugar, softened cream cheese together. Add mashed bananas and one cup of Cool Whip. Whisk or mix this until it is nice & fluffy. Spread this onto the crust when the crust is no longer warm.

    Then mix Irish cream, milk & pudding packages together. Mix very well so that there are not lumps. Pour this on top of the banana cream cheese mixture. Refrigerate overnight or for at least 8 hours.

    Mix the rest of the Cool Whip w/the banana extract & put that on top of the chocolate mix. Enjoy!
