I am trying to incorporate vegetables in baking, found so many nice recipes. I'v seen beets used alot, and knowing how good beets are for you, and trying to get my family to likem as much as me. Well I just had too! These are easy, semi-homemade moist and delicious! To me they have a rasberry taste to them, that maybe next time il add some.

Ingredients For my heart beets cupcake

    white cake mix
  • 1
    8oz can beets in juice
  • 1/2 c
    pureed canned lite pears or applesauce
  • 1
    egg

How To Make my heart beets cupcake

    Puree pears. Blend 1/2 cup pears with beets (i used my bullet.) Add puree to cakemix and beaten egg and beat med for 2min.

    Divide into cupcake lined pans, I sprinkled few valentine jimmies on. Bake on 350 for 18-20min till toothpick comes out clean. I also rolled tinfoil balls outside liner to make hearts. I just dusted with powdered sugar, added whipped toppin to some.
