Everyone has their favorite banana bread recipe. This is mine! It is moist and flavorful...a great way to use up over-ripe bananas. I think the kids let them go brown on purpose!

Ingredients For my favorite banana bread

  • 2 c
    flour
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1/2 c
    butter (softened)
  • 3/4 c
    dark brown sugar
  • 1 tsp
    vanilla
  • 2 lg
    eggs (beaten)
  • 2 1/2 c
    bananas (over-ripe and mashed)
  • 1/2 c
    walnuts (chopped, optional!)

How To Make my favorite banana bread

    Preheat oven to 350 degrees. Spray 9x5 inch loaf pan with Pam or Baker's Joy.

    In a large bowl, combine flour, baking soda and salt. In mixing bowl, cream butter and brown sugar then add vanilla.

    Stir in eggs and bananas until blended, then add flour mixture to moisten and don't overmix. (If you are adding nuts, fold them into batter). Pour batter into pan.

    Bake for about an hour or until a toothpick inserted into the center comes out clean.
