Ingredients For my famous carrot cake

2 call purpose flour

2 cwhite sugar

1 tspbaking powder

1 tspbaking soda

1 tspsalt

1 tspcinnamon

3 cshredded baby carrots (ready to eat baby carrots are sweeter)

1 cvegetable oil
-
4large eggs
- CREAM CHEESE FROSTING

3 ozcream cheese
-
1/4 cbutter or margerine
-
2 csifted powdered sugar
-
1 tspvanilla
-
1/2 cchopped pecans or walnuts
How To Make my famous carrot cake

1Grease and flour 13x9 pan and preheat oven to 325.

2First: Cream together sugar, eggs, oil, vanilla, and carrots.

3Second: Add remaining dry ingredients, use sifter. Mix well for 2 minutes.

4Third: Pour into greased 13x9 pan at 325 for about 55 minutes, or until wooden toothpick inserted comes out clean.

5Beat together frosting ingrediants, EXCEPT NUTS, with handmixer (cream cheese and butter should be softened) SIFT POWDERED SUGAR. Frost cake when thoroughly cooled and sprinkle chopped nuts on top.
