2 csugar

1 1/4 coil
-
4 lgeggs
-
1 tspvanilla extract

4 ccarrots, grated

2 call purpose flour
-
2 tspbaking powder
-
2 tspbaking soda
-
1/2 tspsalt
-
2-3 tspcinnamon ( i use 3)

1 coptional : raisins, walnuts
-
for the glaze :
-
2 - 3 cpowdered sugar
-
1 tspcinnamon
-
1-4 tspliquid..milk or coffee or rum or apple juice whatever you like

1Grease pan(s) 350 *....use 2 bowls... 1 st bowl put in the dry ingredients.flour, salt, baking powder and baking soda, cinnamon stir , set aside

22nd bowl cream together sugar and oil well..then add eggs 1 at a time, then vanilla...while mixing add the dry ingredients from the 2nd bowl 1/4 cup at a time until all combined

3add the carrots, raisins, walnuts, stir by hand.pour in pan(s) bake 1 hr, it could take longer depending on your oven, be sure to check for doneness, because this cake is very moist. Tip: flour your raisins alittle so they stay in the mix and not go to the bottom when baking...

4let the cake cool, mine took about 30 minutes, then invert and glaze....you can also use cream cheese frosting if you warm it up a little to make it easy to drizzle.
