This is an heirloom recipe that has been a family favorite for 4 generations. There is no time given for the meringue so I just keep a close eye on it until it has lovely golden brown color. This is my favorite rhubarb recipe of all time.

Ingredients For muz's rhubarb cake
- CRUST

2 call purpose flour
-
3 Tbspsugar
-
1 tspbaking powder
-
1/2 cchopped walnuts or pecans (optional)

1/2 cplus 2 tablespoons room temperature butter
- FILLING

1-3/4 csugar

4 Tbspflour
-
3 lgeggs yolks, beaten
-
4 crhubarb, diced
- MERINGUE
-
5 lgegg whites
-
3/4 csugar
How To Make muz's rhubarb cake

1Mix crust ingredients well in mixer on low speed. Add nuts, if using. Press on sides and bottom of 9 X 12" pan.

2Mix filling ingredients well by hand. Pour over crust. Bake at 350 for 40 minutes.

3Meanwhile, combine meringue ingredients. Take cake out of oven and spread meringue evenly over the whole surface of the fruit.

4Bake until meringue starts to brown.
