This recipe is from a true Southern lady who made this for our family in my childhood days, and I'm sure many more times. Super yummy and a great way to get that apple a day. The whole family loves this wonderful taste of my childhood in the South!

This wonderful apple cake captures all the freshness of the fall harvest season with its sweet, crisp flavors. Tender and moist, there are bits of soft and juicy apples throughout. We love the soft crunch of the pecans. On top, is a fabulous icing with a consistency that's not too thin or thick. It tastes like butter pecan ice cream and we could eat it with a spoon. A delicious fall apple dessert.

  • CAKE
  • 1 tsp
    salt
  • 1 tsp
    baking soda
  • 3 c
    all-purpose flour
  • 1 1/4 c
    vegetable oil
  • 2 c
    white sugar
  • 3 lg
    eggs
  • 1 c
    chopped pecans
  • 2 tsp
    pure vanilla extract
  • 3 c
    chopped apples
  • TOPPING
  • 1 c
    brown sugar, firmly packed
  • 1 stick
    unsalted butter
  • 1/4 c
    half and half
  • 1 tsp
    pure vanilla extract
  • 1 c
    powdered sugar
  • 1 c
    finely chopped pecans

How To Make ms. geraldine's fresh apple cake

  • Sift salt, baking soda, and flour.

    Preheat oven to 325 degrees F. Butter and flour a tube or Bundt pan. Set aside. Sift together salt, baking soda, and flour.
  • Blend oil and sugar.

    In a mixing bowl, blend oil and sugar.
  • Add sifted dry ingredients to the oil and sugar.

    Slowly add dry sifted ingredients into the oil and sugar mixture.
  • The batter will be stiff.

  • Lightly whisk the eggs.

  • Add eggs to the batter.

  • Stir in nuts and vanilla extract.

    Reduce the speed of the mixer. Stir nuts and vanilla into the batter.
  • Stir in chopped apples.

    For the topping, bring brown sugar, butter, and half and half to a boil in a heavy saucepan over medium heat.
  • Whisk constantly.

  • Stir in vanilla extract.

  • Add powdered sugar.

  • Beat until thickened and cooled.

    Beat with a hand mixer until smooth. Mix gently for about 5 minutes until slightly thickened and cooled.
  • Invert the cake onto a plate.

  • Spoon topping over the cake and sprinkle nuts.
