Every year an elderly lady who attended my husband's church would make his family a walnut cake at Christmas time. After she passed, the job fell to me. Of course, she shelled the walnuts to make her cake but I take the easy way out and buy them already shelled.

Ingredients For mrs. turner's christmas walnut cake

  • CAKE:
  • 1/2 c
    butter, softened
  • 1/2 c
    shortening
  • 2 c
    sugar
  • 4
    eggs
  • 3 1/2 c
    all purpose flour
  • 2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1 1/2 c
    buttermilk
  • 2 tsp
    pure vanilla extract
  • 1 1/2 c
    ground walnuts
  • FROSTING:
  • 2 pkg
    cream cheese - 1 8 oz. and 1 3 oz., softened
  • 3/4 c
    butter, softened
  • 5 - 5 1/2 c
    confectioners' sugar
  • 1 1/2 tsp
    pure vanilla extract
  • 1/3 c
    finely chopped walnuts

How To Make mrs. turner's christmas walnut cake

    Preheat oven to 350 degrees.

    In a large mixing bowl, cream butter, shortening and sugar.

    Add eggs 1 at a time, beating well after each addition.

    Combine flour, baking soda and salt in another bowl.
  • 5
    Add to the creamed mixture alternately with the buttermilk and vanilla. Beat on low speed just until combined.

    Stir in the ground walnuts.

    Pour into 3 greased and floured 9 inch round cake pans.

    Bake for 20 - 25 minutes until a toothpick inserted near the center comes out clean.

    Cool for 5 minutes, then remove from pans to a wire rack and cool completely.

    For frosting, beat cream cheese and butter in a mixing bowl. Add sugar; mix well. Add vanilla; beat until smooth. Spread between layers and over top and sides of cake. Sprinkle with walnuts. Store in refrigerator.
