My mom made this recipe 100's of times while growing up. It is so moist and good. Her secret was in the bananas. The night before she went to make this she would put 3 or more bananas in the blender and puree them. Then she would let them sit all night in the refrigerator, sometimes two nights. The banana puree would be dark and fruity-smelling. She would add that to the cake batter and her cake would be perfect and moist every time!

2 call-purpose flour

1 1/2 csugar

1/2 cbutter or margarine

3 lgbananas

2eggs

1 tspbaking soda
- CREAM CHEESE FROSTING

1 pkgcream cheese, softened, 3 oz

1 Tbspmilk

1 tspvanilla extract
-
2 1/2 cconfectioners' sugar

1 dashsalt
How To Make mom's fresh banana cake

1Pre-heat oven to 350 degrees. Puree the bananas and let sit overnight. You may use them immediately but the overnight sit ripens the bananas to perfection.

2Add baking soda to the pureed banana mixture. Set aside.

3Cream sugar and butter.

4Add eggs one at a time.

5Add flour slowly.

6Add banana mixture to the creamed mixture. Mix just until incorporated. DO NOT OVERMIX.

7Pour into a greased 13x9 pan.

8Bake for 30 min or just until golden brown. Be careful not to over bake.

9For the cream cheese frosting, blend cream cheese, milk, vanilla, and salt. Gradually add powdered sugar, beating until frosting is smooth and creamy. Check that it is of spreading consistency. If too thick add another 1 tsp of milk until it is the right consistency.

10Frost the cake. Sprinkle lightly with chopped pecans.
