Please note this is a CAKE ... NOT a bread, though it works great in loaves, too ... I actually think it's tastier than most banana breads, and lighter!

Ingredients For mom's banana cake

  • 1/2 c
    shortening
  • 1 1/2 c
    sugar
  • 2 lg
    eggs
  • 2 c
    flour
  • 1/2 tsp
    baking powder
  • 3/4 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1 c
    mashed bananas
  • 1/4 c
    buttermilk
  • 1 tsp
    vanilla extract

How To Make mom's banana cake

  • 1
    Cream shortening and sugar.

    Add eggs.
  • 3
    Sift dry ingredients together and add a little at a time. Mix well.

    Add bananas, buttermilk and vanilla
  • 5
    Bake in cake pans or loaf pans at 350 for 30-35 minutes.
