Awesome cupcakes! I also made an 8 x 8 snack cake, as I didn't want all cupcakes. A fellow JAP member had asked me for a peanut butter cupcake recipe, so here it is. You will love it...:) Delicious!

Ingredients For ~ moist peanut butter cupcakes ~ delish!

  • 1 1/2 c
    sugar
  • 2/3 c
    crisco shortening
  • 3
    eggs - room temp
  • 1 c
    creamy peanut butter
  • 3/4 c
    milk with 1 tsp vanilla extract
  • 1 3/4 c
    flour
  • pinch
    salt
  • 2 tsp
    baking powder
  • FROSTING
  • 1/2 c
    butter, softened
  • 3 3/4 c
    confectioners' sugar
  • 1/2 c
    creamy peanut butter
  • 1 tsp
    vanilla extract
  • about
    4 tablespoons milk or cream

How To Make ~ moist peanut butter cupcakes ~ delish!

    preheat oven to 350 degree F. In a large bowl, beat sugar and Crisco, until fluffy. Add eggs one at a time, mixing well after each addition.

    Beat in the peanut butter. In another bowl, mix flour, salt and baking powder well. Alternate between milk mixture and flour mixture, ending with flour. Beating well after each addition.

    Fill greased cupcake tins 3/4 of the way full. ( I made 17 cupcakes and 1- 8 x 8 cake with the recipe. ) Bake for 25 - 30 minutes or until pick inserted comes out clean. Cool the cupcakes completely before frosting.

    Frosting: Mix the butter and sugar together well, beat in the peanut butter and mix well. Add the vanilla and as much milk as it takes to get the consistency you desire.
