mississippi mud cake/brownies

We have always called this a cake but to me it is more "brownie" like. No matter what you call them, they are sinful! I like them best warm and gooey! Easy to make and great to eat!

Ingredients For mississippi mud cake/brownies

  • 2 stick
    margarine, softened
  • 2 c
    sugar
  • 4
    eggs
  • 1/2 c
    cocoa powder
  • 1/8 tsp
    salt
  • 1 1/2 c
    plain flour
  • 1 tsp
    vanilla
  • ICING
  • 1 stick
    margarine
  • 4 Tbsp
    coca-cola soft drink
  • 5 Tbsp
    cocoa powder
  • 1/2 tsp
    vanilla
  • 16 oz
    powdered sugar (2 cups)
  • 10 oz
    mini-marshmallows

How To Make mississippi mud cake/brownies

    Cream margarine, eggs and sugar, beat till well blended.

    Add remaining ingredients for cake and beat till smooth.

    Spread into a 9X13 greased pan. Bake at 350 degrees for 30-35 minutes.

    Take out of oven and top with marshmallows. Set aside while making Icing.

    ICING - Over medium heat, bring margarine, cocoa and coca-cola in sauce pan and bring to a boil.

    Remove sauce pan from heat. Stir in powdered sugar and vanilla, mixing well. Pour over the top of marshmallows.
