This is a recipe from Allrecipes. I just love mini muffins. Something about them, seems to taste better. And, they are so cute...whatever, I know that sounds silly! Just make some & enjoy!

1 3/4 call-purpose or unbleached all-purpose flour

1/2 cbrown sugar, packed

1/2 cwhite sugar

1 tspground cinnamon

1/2 tspground ginger
-
1/2 tspground nutmeg

1 tspbaking soda
-
1/4 tspbaking powder
-
1/2 tspsalt
-
2 lgeggs
-
1/2 cmelted butter
-
1 ccanned pumpkin puree

1 pkg(6 oz) butterscotch chips
How To Make mini pumpkin butterscotch muffins

1Preheat oven to 350°F. Grease mini-muffin pan with cooking spray.

2Sift together the flour, white sugar, spices, baking soda, baking powder, and salt, in a large bowl.

3Whisk together the eggs, melted butter, brown sugar, and pumpkin, in a separate bowl. Add flour mixture, to the egg mixture.

4Stir in butterscotch chips; pour batter, into each cup, to about 3/4 full.

5Bake, in preheated oven, until they test clean, with a toothpick, 10-12 minutes. Makes 48 muffins.
