mimi's mandarin orange cake aka dennis' favorite
I got this recipe about 40 years ago from someone's baby shower. Goodness, I'm an old lady!! After I married my husband once I made this cake he made it his favorite! If I don't watch him he will sit with the pan in his lap and eat the whole thing. There are other recipes calling this a Pig Pickin' Cake or something with pineapple or oranges but I haven't found one that has the oranges in the frosting too, just in the cake. I think the oranges in the frosting make the cake. This cake is great after being kept in the refrigerator, so cool and light! YUM!

- CAKE INGREDIENTS

1 boxduncan hines golden butter cake mix

4eggs, slightly beaten

1/2 coil

1 canmandarin oranges with juice
- FROSTING INGREDIENTS

1 sminstant vanilla pudding

1 lgcrushed pineapple with juice

1 canmandarin oranges, drained

1 smcool whip, thawed

1This cake can be made as a 3 or 4 layer cake or baked in a 9 x 13 pan. Preheat oven to 350. Bake until toothpick inserted comes out clean. The length of time will depend on what type of pans you use. The 9 x 13 pan takes about 30 minutes, the layers take less time.

2Prepare cake pans by spreading a thin film of shortening and then coating with flour by putting about a tablespoon in the pan and then rotating it to cover.

3Beat all cake ingredients in a large bowl for 4 minutes. Pour batter in prepared pan or pans and put in oven. Once cooked remove from oven and cool 5 minutes then remove from pans and place then on wire racks to cool. This doesn't need to be done with the 9 x 13 pan, only the layers.

4For the frosting make sure the mandarin oranges are completely drained. Mix pudding mix with the Cool Whip, stir in the oranges and then the crushed pineapple with the juice. Frost the cake as desired. Keep leftovers in the ice box, there won't be many!
