With Mardi Gras coming up, I got to thinking about this bread. Have made this for years. It's really good served with warm honey butter. Enjoy!

A yummy breakfast treat and good enough for a light dessert. Moist, tender, and full of flavor, this bread has the flavor of carrot cake with pineapples and pecans added. We loved the pops of sweetness from the pineapple and the crunch of the pecans. Your kitchen will smell amazing while this bakes. De-lish!

Ingredients For mardi gras bread

  • 1 1/4 c
    cooking oil
  • 2 c
    sugar
  • 2
    eggs
  • 2 c
    shredded carrots
  • 1 can
    crushed pineapple (undrained), 8 oz.
  • 3 c
    all-purpose flour
  • 1 tsp
    baking soda
  • 3 tsp
    cinnamon
  • 1 tsp
    salt
  • 1 tsp
    vanilla
  • 1 c
    chopped pecans or walnuts

How To Make mardi gras bread

  • Sugar, egg, and oil combined in a bowl.

    Beat oil, sugar, and eggs well.
  • Adding carrots and pineapple to the bowl.

    Add in carrots and pineapple; mix well.
  • Dry ingredients ready to be sifted.

    Sift dry ingredients.
  • Adding dry ingredients to wet ingredients.

    Add dry ingredients to the wet ingredients.
  • Vanilla and nuts added to the batter.

  • Batter poured into two loaf pans.

    Grease and flour 2 loaf pans. Divide batter evenly between the pans.
