With Mardi Gras coming up, I got to thinking about this bread. Have made this for years. It's really good served with warm honey butter. Enjoy!

We loved the pops of sweetness from the pineapple and the crunch of the pecans. Your kitchen will smell amazing while this bakes. De-lish!

Ingredients For mardi gras bread

1 1/4 ccooking oil

2 csugar

2eggs

2 cshredded carrots

1 cancrushed pineapple (undrained), 8 oz.

3 call-purpose flour

1 tspbaking soda

3 tspcinnamon

1 tspsalt

1 tspvanilla

1 cchopped pecans or walnuts
How To Make mardi gras bread

1Beat oil, sugar, and eggs well.

2Add in carrots and pineapple; mix well.

3Sift dry ingredients.

4Add dry ingredients to the wet ingredients.

5Add vanilla and nuts.

6Grease and flour 2 loaf pans. Divide batter evenly between the pans.

7Bake at 350 degrees for 1 hour or until a tester comes out clean.
