This dessert comes from my cousin, Mary Lou...Simple to put together...You can substitute splenda white and brown sugar..I do for my diabetic husband...Enjoy.

Ingredients For mandarin orange cake

  • 2 c
    all purpose flour
  • 1 tsp
    vanilla extract
  • 1 tsp
    salt
  • 2
    eggs
  • 2 tsp
    baking soda
  • 2 c
    wht. sugar or splenda
  • 1 c
    pecans chopped
  • 2- 11oz can
    mandarin oranges (use 1 1/2 cans juice and whole segments.
  • TOPPING
  • 1 c
    brown sugar or splenda brn sug
  • 2 Tbsp
    canned milk
  • 4 Tbsp
    butter

How To Make mandarin orange cake

    Combine all ingredients in a bowl and beat gently 2 to 3 minutes..put in 9x13 baking dish. Bake for 30 minutes at 350..degrees.

    For the topping: Bring to a boil and pour over hot cake..
