I've been making this coffee cake for years and it's still my favorite one of all. It takes a little time to make, but well worth the effort. Just perfect for a Sunday morning with a nice hot cup-o-joe!

Ingredients For mama robin's coffee cake

1 1/2 call purpose flour (sifted)

2 1/2 tspbaking powder

1/2 tspsalt
-
1egg
-
3/4 csugar

1/3 cbutter, melted

1/2 cmilk
-
1 tspvanilla extract
- STREUSEL
-
1/2 clight brown sugar, packed

2 Tbspbutter, softened
-
2 Tbspall purpose flour
-
1 tspcinnamon
-
1/2 cwalnut pieces or pecan pieces (optional)
How To Make mama robin's coffee cake

1Preheat oven to 375. Lightly grease 8x8x2 square or 9x1-1/2" round cake pan.

2Prepare strusel mixture by combining ingredients in a small bowl and mixing with a fork until crumbly.

3Batter: beat egg with mixer until frothy. Add sugar & butter and beat until blended. Add milk & vanilla. Stir in flour, baking powder & salt and mix thouroughly.

4Spoon 1/2 batter into prepared pan. Sprinkle 1/2 of the strusel mixture evenly over batter. Spread remaining batter on top and sprinkle remaining strusel mixture over batter again.

5Put pan on center rack in over and bake 25-30 min. or until toothpick inserted in center comes out clean.

6When done, cool on wire rack for 15-20 min. Cut warm coffee cake into squares or wedges and serve immediately.
