I got this receipe from howsweeteats.com. This is so yummy and just screams summer!!! Pictures to come. I doubled the cupcake part of the receipe and I had more than enough frosting by just doing the single receipe of the frosting. Took these into work and everyone couldn't stop raving about how good they were! Also, I cooked the first batch for the 20 minutes the receipe calls for and they were a bit over cooked. The rest of them I cooked for about 17 mintues and they were much better.

Ingredients For malibu rum (coconut) cupcakes
- CUPCAKES

1 csugar

1/2 cbutter
-
2eggs
-
1 tspvanilla

1/2 tspcoconut extract

1/2vanilla bean contents
-
1 1/2 cflour
-
1 tspbaking powder
-
1/4 ccoconut milk
-
1/4 cshredded coconut
-
1/4 ccoconut rum(i prefer malibu)
- MALIBU FROSTING

1 cbutter, softened
-
1 1/2 - 2 lbpowered sugar

1/4 ccoconut rum
-
1 Tbspvanilla
How To Make malibu rum (coconut) cupcakes

1Preheat oven to 350

2Cream butter, sugar, and eggs together until fluffy.

3Add vanilla, coconut extract and vanilla bean and mix until combined.

4Combine dry ingredients into a bowl.

5Add half of the dry ingredients, mixing until just combined.

6Add the coconut milk.

7Once mixed, add remaining dry ingredients.

8Add coconut rum and fold in shredded coconut.

9STEPS FOR MAKING COCONUT FROSTING

10Cream butter until smooth

11Gradually add powdered sugar, alternating with rum and vanilla, until desired consistency is reached

12Feel free to add more or less sugar or liquid based on how thick you want the frosting.
