Ingredients For macaroon muffins
- MUFFINS:

1 cbutter, softened

1/2 cgranulated sugar

1 lgegg

1 tspvanilla

1/2 tspalmond extract

2 call purpose flour
- MACAROON FILLING:

2 lgeggs

1/2 cgranulated sugar

1 cfinely chopped blanched almonds
-
1 tspalmond extract
-
1/2 cflaked coconut, chopped fine
How To Make macaroon muffins

1Muffin mixture: In a large bowl, cream butter and sugar. Beat in eggs, flavorings and flour. Drop by teaspoon into sprayed, mini muffin cups. Press dough on bottom and up sides of cups. Chill Fill cups with Macaroon Filling. Bake for 25-30 minutes at 325^ . makes about 50 mini muffing.

2Macaroon Filling: Beat eggs until light and foamy. Gradually beat in sugar until well blended. Fold in almonds and coconut and extract. These freeze well.
