In Florida we have "Meyer lemons" that are larger than grapefruit!! You only need one to make a lemon pie or this wonderful pound cake. I'm lucky that my husband is a great gardener and makes sure I have lemons for cooking and baking

Ingredients For luscious lemond pound cake

  • 1 box
    lemon cake mix (i use duncan hines moist supreme mix)
  • 1 pkg
    instant lemon pudding mix
  • 4 lg
    eggs
  • 1 c
    fresh lemon juice (ifyou don't have enough, add water to equate
  • 2 tsp
    lemon zest, grated
  • 1/2 c
    vegetable oil

How To Make luscious lemond pound cake

    Preheat oven to 350 degrees. Grease and flour 10" bundt pan
  • 2
    Combine all cake ingredients in a mixing bowl. Beat at medium speed 2 minutes. Pour into prepared pan. Bake at 350 Degrees 50-60 minutes or until tests done. Cool on rack

    Prepare a simple glaze-Use lemon zest and lemon juice-add confectioners sugar to achieve proper thickness, adding milk or more lemon juice to thin. Pour over cake and let set
