Ingredients For lower sugar coconut cake

1 boxsugar-free yellow cake mix

3 lgeggs
-
1/3 coil
-
1 cwater
-
1 1/2 tspcoconut extract/flavoring, divided

1tub lite whipped topping, thawed

1 pkgartificial sweetener (like sweet 'n low, equal etc...)

1 1/4 cflaked coconut, divided (approx.)
How To Make lower sugar coconut cake

1Preheat oven to 325 degrees F. Gather ingredients.

2Spray the bottom of a 9"x13" pan or baking dish with Baker's Joy cooking spray.

3In a large bowl, mix together for a few seconds, eggs, water, oil and one teaspoon coconut flavoring.

4Add cake mix and beat with mixer on medium speed for 2 minutes.

5Pour batter into prepared pan.

6Bake at 325 degrees F for 34 to 36 minutes (until toothpick inserted in center comes out clean; don't overcook.)

7Allow to cool completely before frosting. You may refrigerate cake to speed cooling after cake has cooled on counter for at least 1/2 hour.

8To make frosting, add 1/2 teaspoon coconut flavoring, one packet of artificial sweetener and about 1/4 cup flaked coconut to whipped topping, stirring until well combined.

9Spread frosting over top of cooled cake, then evenly sprinkle remainder of flaked coconut over all.

10Cover and refrigerate leftovers.
