A sweet treat for those watching their carbs, and just in time for fall! Carbs are about 5-6 in a large piece and about 3 in a small one.

How To Make low carb apple cake
-
1(preheat oven to 350 degrees) Spray a 7X10 cake pan with non stick spray and layer the apples on the bottom. Sprinkle the nectresse mixed with 2 tsp. of the cinnamon over the apples.
-
2Put the rest of the dry ingredients in a large mixing bowl and stir them up well. Add all of the butter, vanilla and eggs and beat on med speed for about 2-3 minutes. Batter will be a little on the thick side but if it is too stiff then add a few drops of water.
-
3Spread the batter over the sprinkled apples and smooth to seal the edges.
-
4Bake in preheated oven for about 30-40 minutes. Ovens vary in time and temp so I use a clean knife to test the cake, when the knife is clean it is done. Let the cake cool for a while and then serve either warm or cooled with fresh whipping cream if you like or plain. Great with a cup of coffee!
