Ingredients For light blackberry cheescake

  • 1 c
    cottage cheese, lowfat
  • 1(8oz) pkg
    cream cheese
  • 2 lg
    eggs
  • 2 tsp
    vanilla extract
  • 1/2 tsp
    baking powder
  • 1/4 c
    all purpose flour
  • 1/3 c
    grits or polenta
  • 1/4 c
    buttermilk
  • 3/4 c
    powdered sugar
  • 1 1/2 c
    blackberries

How To Make light blackberry cheescake

  • 1
    Mix cheese and sugar.Add eggs, one at the time, and then add vanilla extract. In a separate bowl, mix flour,grits and baking powder.Add dry ingredients to the cheese mixture.Add the buttermilk.

    Pour dough to 8 inch pan.Arrange the blackberries on top of the dough and push them gently into the dough.

    Bake 50 minutes in a 350 degree preheated oven.Enjoy.
