This cupcake is so yummy and makes me think of spring! :) I've never made a lemon cake or cupcake before...but when I found this recipe I just had to try it! I found this on webstaurantstore.com a place where I purchase the things I need for my business'...I wasn't even aware they had recipes...so totally stumbled onto this by accident while buying some cupcake liners the other day. I didn't have a lemon, so just used realemon juice out of the bottle. Worked just fine! But I would like to have had some zest for decor purposes. Also, as I stated in the directions...this cupcake would be so good with just a simple lemon glaze of lemon juice and powdered sugar or a dusting of powdered sugar...no need for the heavy frosting.

Ingredients For lemon dream cupcakes

1 cbutter, softened

zestfrom 1 lemon, i used 1t of lemon extract since i didn't have a lemon on hand

2 Tbsplemon juice

1 tspvanilla

3 1/2 cflour
-
1 tspbaking soda

1/2 tspbaking powder

1/2 tspsalt
-
2 csour cream (i used light)
- FROSTING:

1 stickbutter
-
4 1/2 cpowdered sugar
-
2 Tbsplemon juice
-
1 1/2 tspvanilla
-
zestof one lemon (i added extra tablespoon of lemon juice)

1-3 Tbspmilk or cream
-
yellow food coloring, if desired
How To Make lemon dream cupcakes

1Preheat oven to 350. Put cupcake liners into cupcake pans. Sift together flour, soda, powder, salt and set aside. In large mixing bowl, cream together butter and sugar until fluffy. Add eggs and beat on high 2 minutes, scrapping bowl occasionally. Add in lemon juice and vanilla, mixing well. Add half of the flour mixture and mix well. Add sour cream and mix well, then gradually add remaining flour mixture, mixing til just blended well. Batter will be very thick. Fill cupcake liners 3/4 full and bake at 350 for 17 min. Remove from oven and cool in pans 10 mins then remove to wire racks to cool completely.

2Frosting: In a mixing bowl cream together butter and powd sugar, add in remaining ingredients except milk, add milk as needed mixing til the desired consistency. Stir in food coloring...my frosting, to me, got way to yellow...so better to add a drop at a time verses just squirting some in. lol

3I feel this cupcake is very good on its own and I think a simple lemon glaze of powdered sugar and lemon juice would be wonderful! No need for the frosting. Or even a dusting of powdered sugar would be fine! AND of course you could fill this cupcake! lemon pudding, cheesecake pudding or vanilla pudding would be great! I would have done alot more if I'd have had the time...but my daughter needed them rather suddenly. lol
