Ingredients For lazy daisy oatmeal cake

1 1/4 cboiling water

3/4 ccoconut, flaked

1/2 cchopped nutmeats

3 Tbsphalf and half

1/2 cbrown sugar, firmly packed
- FROSTING INGREDIENTS

1/4 tspnutmeg
-
3/4 tspcinnamon
-
1/2 tspsalt
-
1 tspbaking soda
-
1 1/2 call purpose sifted flour
-
2eggs
-
1 tspvanilla extract
-
1 cbrown sugar, firmly packed

1 csugar
-
1/2 cbutter, softened
-
1 coatmeal, uncooked
-
coconut, flaked
How To Make lazy daisy oatmeal cake

1Blend in vanilla and eggs.

2Add oats mixture; blend well.

3Sift together flour, soda, salt and spices.

4Add to creamed mixture; blend well.

5Pour batter into a well-greased and floured 9-inch square baking pan.

6Bake in preheated 350 oven 50 to 55 minutes.

7Do not remove cake from pan.

8Frosting - combine all ingredients.

9Spread evenly over cake.

10Broil until frosting becomes bubbly.

11Serve warm or cold.

12VARIATION - COCOA OATMEAL CAKE: Increase boiling water to 1-1/3 cups in above recipe. Use 3 tablespoons cocoa in place of the cinnamon and nutmeg. Prepare and bake as above.

13Cake - Pour boiling water over oats; stir to combine. Cover and let stand 20 minutes.

14Beat butter until creamy; gradually add sugars, beating until fluffy.
